Eddie's Kitchen: Grilled Sea Bass
Okay guys, this should be an interesting one for you.
It has roots in Thailand and is grilled sea bass with a lime, ginger and coriander sauce, served with steamed veg.
This one is also dedicated to editor Ryan.
What will you need?
- 1 medium sea bass per person (whole, gutted and cleaned)
- 1 small red chilli (de-seeded and diced finely)
- 1 thumb-sized chunk of ginger (sliced into small strips)
- 1 cup of coriander
- The juice of 2 limes and the zest of 1 Lime
- 25g of caster sugar
- Vegetables for steaming (your choice)
- Cracked black pepper & sea salt
- 50ml Water
Method
- With your sea bass slice the sides of the fish 3 times on each side, slicing through deeply
- Rub salt and pepper into the fish
- Place your veg into a steamer (if you do not have a steamer you can make one with a metal colander over a simmering pan of water, and then place a lid over the top) and cook for 15-20 minutes (veg should have a slight crunch)
- Place your griddle pan onto the hob and bring to a high heat
- Place your fish into the pan, allow to cook for 3 minutes before turning (if it is stuck to the pan, allow to cook a little longer and the natural oils in the fish will unstick it from the pan)
- In a small saucepan, add your lime juice, sugar and water, stiring constantly until sugar had dissolved
- Add your lime zest, ginger and chilli
- Bring to a gentle simmer, stirring well
- At the last minute add half of the coriander to the sauce, stirring well
To Plate Up
- Lay down your cooked fish onto a hot plate
- Spoon out the vegetables, making them look fancy
- Drizzle over a couple of spoons of the sauce
- Sprinkle over some shredded coriander and serve
Chef's Tips
- Before you drizzle over the sauce do a little taste test. If it is too sharp add a couple of teaspoons of sugar and allow to dissolve
- If your fish is on the large size, cook for a little longer on a lower heat to allow to cook through
- If you would like yours to be hot, don't de-seed your chilli. Dice and add, seeds and all (if you want it even hotter, just before you serve your sauce add 3-5 drops of Tabasco or any other extreme hot sauce)
