Boxing Day Soup
OK so this is a recipe for Boxing Day Soup; it is very very easy to make, all you need is the leftover meat and vegetables from your Christmas Day dinner, so here's what exactly you need and how to make it...
Ingredients and apparatus:
- 1 large cooking pot with lid
- 50ml of extra virgin olive oil (EVOO), though any cooking oil will do
- Small knob of butter (1 tsp will be about the right size)
- 2 average-sized red onions (diced)
- 2 cloves of garlic (crushed and diced)
- Any leftover vegetables (carrots, potatoes, swede, broccoli, cauliflower, parsnips, leeks, those dreaded sprouts, cabbage and anything else you have left over)
- About 300-500 grams of leftover turkey (or any meat which you have left over and are not using for cold meats)
- 1 veggie OXO cube, 1 chicken OXO cube, and 1 beef OXO cube (chicken and beef for meaty soup, if you are not using the chicken and beef use 3 veggie OXOs instead)
- 1 litre of hot water (not boiling)
- 1 stick blender or food processor
Method:
- In your large pot, place the EVOO and butter, and heat
- Add your diced onions and garlic, lightly fry until soft
- Add hot water and crumble in OXO cubes
- Simmer for 10 minutes
- As pot is simmering cut up the vegetables into 1-inch chunks
- Add vegetables to pot and stir well
- Simmer for 20 minutes, until your vegetables have begun to breakdown and thicken the water
- Add in diced-up meats
- Bring to the boil then simmer on a very low heat for an hour
- Add salt and pepper to taste
- Allow to cool and store in the fridge overnight (this will help all the flavours to infuse and intensify)
- Use stick blender (or food processor) to blitz up the soup until it becomes smooth (you're after the consistency of Readybrek or Porridge)
- Then return to the heat and bring to a slow boil (stirring often to reduce sticking to the base of the pan)
- Allow to simmer and then taste (if you need to add seasoning do so)
To serve:
- Place a dollop of extra thick cream into the base of a soup bowl (optional)
- Ladle over soup (two medium ladles per bowl)
- Dust with fresh Parmesan (optional)
- Serve with a warm crusty bread roll (optional)

i do try lol, and ya never know, come the new year, if i can get one, i shall be recording Cookery Shorts and putting them up on here, so there will be a variety of Good Eats to be cooked, things like the Clasics of Cakes, Coconut Ice, and pies, along with Quick Eats like, Omlettes, Salads, and much much more, just say what you wanna learn to cook ill give instructions
