  • Steak Fajita With Peppers

Hey guys, I know I promised you a while back to write a recipe for chilli con carne, but unfortunately I haven't got around to testing out the recipe myself, so I have decided to tempt you with a fajita first.

What will you need?

  • 500 grams of chicken breast (approximately 3-4 breasts, sliced)
  • 1 medium onion (sliced)
  • 3 bell peppers (yellow, green and red, sliced thinly)
  • Seasoning mix (chicken is okay, but if you can get a fajita seasoning pack from any supermarket)
  • Salsa (mild, medium or hot - it depends how hot you want it)
  • Grated cheese (a chedder and mozzerella mix works well)
  • A little extra virgin olive oil (EVOO)
  • 8 tortilla wraps (these can be any size and any make)

Method

  1. Slice your chicken breast into 1cm slices (you will need a very sharp knife for this)
  2. Place your sliced chicken into a bowl with some EVOO and your seasoning mix
  3. You now need to get your hands in and mix your chicken, oil and seasoning until the chicken is covered (if you have rubber gloves, use them for this)
  4. In a HOT deep frying pan you need to add your chicken (using tongs or a fork you need to turn the chicken every 5 minutes until thoroughly cooked)
  5. Once your chicken is cooked, remove from pan and place in a large bowl
  6. Now to your pan add a little more EVOO, and your sliced onion and bell peppers. Allow to soften, stirring often
  7. In a dry frying pan, warm through the tortilla wraps for 10 seconds each side (or place all of them into a microwave for 45 seconds to a minute)
  8. Serve up and enjoy

How do you build a wrap?

  • Place your wrap onto a plate
  • Place 3-4 pieces of chicken in the centre of the wrap
  • Place a couple of spoonfuls of the onion and peppers
  • Place a dollop of salsa
  • Place a small mound of cheese
  • Fold up the bottom of the wrap, then the two sides

Chef's Tips

  • For additional taste add some diced pancetta or smoked streaky bacon

I'm a massive hot and spicy food fan - any chance of a recipe with some zing that's not something obvious like a curry or Mexican dish?
