Eddie's Kitchen: Lightweight Spag Bol

  • Spaghetti

English version

OK so this is another cookery short (unfortunately I haven't got round to getting a camera yet).

Please note that parental/guardian supervision may be required for parts of this recipe for a Healthy Spaghetti Bolognese to feed a family of 4.

Ingredients and apparatus:

  • 500g bag of Quorn mince (has to be Quorn mince for the healthy factor, if you cannot use Quorn mince for health or diet reasons you may use your preferred vegetarian mince)
  • 2 tins of chopped tomatoes (reduced salt variety if you can get it, but any tin of chopped tomatoes will be OK)
  • 1 clove of garlic (crushed and diced)
  • 1 medium onion - diced
  • 1 large carrot - diced
  • Half cup of frozen peas
  • 7-10 mushrooms (quartered)
  • 10-15ml of extra virgin olive oil (EVOO)  (or you can use Vitalite dairy-free spread, which is the healthier option)
  • Pasta (can be dried or fresh egg pasta)
  • 1 stock cube (Oxo or equivalent) 
  • Grated cheese (20g per person)
  • 2 saucepans
  • Colander 

Method:

  • Add a little EVOO into a hot pan and then add the diced onion and soften (do not allow to burn as this will taint the flavour), this should take 3-5 minutes 
  • Add in the diced carrot and allow to soften (keep the onion and carrot moving so it won't stick to the pan)
  • Add the Quorn mince and allow to heat through (10 minutes, keep moving)
  • Add garlic and crumble in stock cube and stir well
  • Add the tin of tomatoes and cook through 
  • Add the peas and mushrooms and simmer
  • In a separate pan, half fill it with water and place on the hob, and drizzle in a teaspoon of EVOO (This will stop pasta from sticking together) and a pinch of salt
  • Bring to the boil and add the pasta, cook until soft (fling a small piece of pasta to a cupboard door, if it sticks it's cooked - ask permission first)

To Serve:

  • Drain the pasta and heap a small pile into the middle of the plate 
  • Ladle over Bolognese 
  • Sprinkle over the cheese and enjoy

I LOVE quorn! I was just making carrot soup and I was thinking about your cookery shorts wondering when you'll be uploading them, and here's one now!Whoo! x

now is there anything else you would like to learn how to cook???

Welcome! And ummmm... there's loads to be honest, but I can't think of one from the top of my head right now. I want to learn to cook without my mother for once (she's a cook). How about a lasagna or chili? x

ok, keep watching and the next one shall be a Delicious Lasagne, and the following will be a Chillie Con Carne and Rice, with a home made Guacamole Sauce and Tortilla Chips,

lol @Miss_Survivoroxoxo i do try lol, im currently putting together the recipe for the Chille Con Carne, and once have that completed and tested it shall be going up, im hoping that after i have got work i will be able to afford a Digital Video Camera and will be able to do Cooking Videos, but i will have to wait and see
